I hope you like this cause it took way too much time to post...


I tried posting this a while ago, but the internet was too wacky and unreliable at the time.

This is a recipe that my family have been enjoying. mom got the recipe a long time ago from an ex-hippy friend. It's reeealy good! It's also quite a quick meal, so I'm double partial to it. :) Actually, make that triple partial because it's also good for you.


Beans over Rice with Chutney

Beans:
Bring to a boil:
1 lb. pinto beans (or red beans), covered+ with water
Turn off and let sit for an hour; then rinse out old water.
Add to beans and cook until beans are tender (something like half an hour in a pressure cooker):
Water to well cover beans
Salt, pepper
1-2 tsp. cumin
1 onion, coarsely chopped
1-4 Tbsp. oil
The beans should be mostly whole with some broth/juice when done.

Rice:
Cook till water is nearly gone, then turn off and let sit with lid on tightly:
2 cups brown rice
4 cups water
Soy sauce
2 Tbsp. butter
Salt, pepper

Chutney:
Mince and stir together:
4-9 (2 cups) tomatoes
1 (1/2 cup) onion
Add:
1-7 (1/4-1/2 cup juice) squeezed lemons

Make the chutney ahead of time to let it sit for half an hour or so in the fridge. Serve the rice with a layer of beans and juice and then chutney over that. Fresh bread or Hard Rolls (a specific recipe of ours) go well with this meal, but we often skip that. The rice can be made any old way, really, just however you usually do, and plain rice or white rice or whatever works fine. But the smell of rice cooking with butter in it is heavenly. Mmmmm.. The beans can take a while, so it’s works best for me to cook a kilo at a time and use half one day for tacos/burritos or something and half for this recipe another day.

Note: if you don’t have a pressure cooker, get one! (and learn how to use it properly… ;))

By the way, if any of you know how to do things with picture--or I should say, without them giving you fits because I already know hooow to do it--I would love to know. Especially, can you move pictures around once they are already uploaded? (This would be a lot easier in person...)

hey anna...the recipe sounds good! I still haven't made it, even though you sent it to me...the thing is, we basically already eat that a lot, just minus the chutney I guess. We usually put sliced sausage links in the beans, sauteed, as well. Its such a plain meal, but lately I've gotten where I just love it! Later I'll have to send you the recipe I came up with the other day, which I'm making tonight. Its fun!

I made this at work but they other fells turned their noses up... I didn't mind eating it myself while they went out for fatty burgers...again
